"I would like to connect headphone to my Beovision 11, but this television does not have a mini jack connection. I have purchased an RJ45 to mini jack cable to solve this problem. Can someone tell me which RJ45 input I should connect this cable to, and any settings I may need to change/add to use the headphones?"

Does your TV have this panel in the middle on the back. You press to open.

That image is in my manual but my BeoVision 11 does not have that panel with the headphone jack.
